Used in traditional cooking since ancient times, Garcinia cambogia which is also known as Goraka or Malabar tamarind is considered an essential in Sri Lankan households especially if you are a seafood and pork fan. The fruit looks like a small pumpkin while the dehydrated Garcinia comes in pieces which we call the rind. The sweet pulp, which comes within is not dehydrated.
Used as a souring agent replacing tamarind and lime, the Goraka rind is dehydrated methodically so that the nutrients of the fruit are intact. Goraka is one of the main ingredients when preparing Fish Ambulthiyal and Black Pork Curry which are much loved dishes in Sri Lankan cuisine.
Garcinia cambogia is known for its immunity boosting qualities while it is considered a vital ingredient in Ayurvedic practices. This humble fruit also promotes digestion and aids in correcting bowel complaints.
